Sanctuary Coffees™ are harvested from carefully selected farms still growing coffee under a canopy of shade trees. Coffee grows more slowly in the shade, and like fine wines, the slower growth creates beans with a sweeter, more complex flavor. Shade coffee farms also protect the rapidly disappearing winter habitat for many of the species of migratory songbirds that brighten our summer days.
